A rich and refreshing creamy chicken pasta salad made with tender chicken, crunchy veggies, and a tangy mayo-sour cream dressing. Perfect for picnics, meal prep, or casual family dinners.

  • 3 cups cooked rotini or penne pasta
  • 2 cups cooked chicken, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 2 stalks celery, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a full boil. Cook pasta for 10 to 12 minutes until just before al dente. Drain and rinse under cold running water for about 30 seconds. Let cool completely before adding to dressing.
  2. In a large mixing bowl, whisk together mayonnaise, sour cream, lemon juice, garlic powder, salt, and black pepper until smooth and creamy with no lumps.
  3. Add the fully cooled pasta to the dressing and toss gently to coat every piece evenly before adding remaining ingredients.
  4. Add chopped chicken, diced celery, red onion, and fresh parsley. Toss gently until evenly combined without over-mixing.
  5. Cover and refrigerate for at least 20 minutes to allow the flavors to fully meld together.
  6. Stir well before serving. If thickened after chilling, stir in a spoonful of mayo or sour cream and a fresh squeeze of lemon juice. Garnish with extra parsley and serve cold.
