1 lb chicken breast, cooked and shredded
4 cups chicken broth
1 cup heavy cream
1 bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
2 tbsp Cajun seasoning
Salt to taste
Black pepper to taste
Heat oil in a large pot over medium heat. Sauté onions and bell pepper for 5-7 minutes until softened. Add garlic and cook for 1 minute more.
Pour in chicken broth and add Cajun seasoning. Stir well and bring to a boil.
Reduce heat to medium-low. Stir in shredded chicken and heavy cream.
Let soup simmer for 10 minutes, stirring occasionally, allowing flavors to meld together.
Taste and adjust with salt and pepper as needed. Serve hot with desired garnishes.
Notes
Start with less Cajun seasoning if sensitive to spice – you can always add more. Rotisserie chicken saves time and adds extra flavor.
Don’t boil soup after adding cream to prevent curdling. Keep at gentle simmer for best texture.
Soup thickens upon standing. Thin with extra broth or cream when reheating if needed.
