  • 1 pound ground turkey
  • 1 cup fresh cranberries (or frozen)
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 1 stalk celery, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • ½ cup chicken broth
  • Olive oil for drizzling

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheet with parchment paper.
  2. In large bowl, combine breadcrumbs, cranberries, onion, celery, garlic, sage, thyme, salt, and pepper.
  3. Add ground turkey, eggs, and chicken broth. Mix thoroughly until mixture holds together.
  4. Take handful of mixture and roll into balls approximately 1 to 1½ inches in diameter. Wet hands slightly to prevent sticking.
  5. Place formed stuffing balls onto prepared baking sheet, spacing about 1 inch apart. Drizzle lightly with olive oil.
  6. Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F. Cool for few minutes before serving.

Notes

  • Fresh cranberries provide best tart flavor, but frozen work well too. Don’t thaw frozen cranberries before using.
  • Freeze in single layer then transfer to container for up to 3 months. Reheat from frozen by adding 5 minutes to baking time.
