A heartwarming, thick, and creamy potato soup slow-cooked with flavorful sausage, tender potatoes, aromatic herbs, and melty cheese. Perfect for busy weeknights.

  • 1 lb Italian-style sausage (mild or spicy)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups potatoes, peeled and diced into ½-inch chunks
  • Fresh parsley or green onions, chopped for garnish
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme or Italian seasoning blend
  • 1 tablespoon olive oil for sautéing
  • ½ cup cheddar cheese, shredded

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sausage and cook, breaking into crumbles until browned, about 7-8 minutes. Drain excess grease and transfer to 6-quart crockpot.
  2. In same skillet, sauté chopped onion for 3-4 minutes until soft. Add garlic and cook for 1 minute more. Transfer to crockpot with sausage.
  3. Add diced potatoes, chicken broth, salt, pepper, and thyme to crockpot. Stir well to combine.
  4. Cover and cook on Low for 6-7 hours or High for 3-4 hours, until potatoes are fork-tender.
  5. Stir in heavy cream and cheddar cheese. Let cook uncovered for another 15-20 minutes on warm setting until cheese melts.
  6. Use potato masher to gently mash some potatoes in pot for thicker texture, leaving some chunks.
  7. Ladle into bowls and top with fresh parsley or green onions. Serve hot.

Notes

  • Browning sausage first adds deeper flavor to the soup base.
  • Yukon Gold or Russet potatoes work best for creamy texture.
  • Can use whole milk instead of cream for lighter option.
  • Freeze base without cream for up to 2 months, add cream after reheating.
  • Mashing some potatoes creates natural thickening without flour.
