Ingredients

  • 2 cups almond flour
  • 1 cup full fat cottage cheese
  • 1 large egg 
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon Everything but the bagel seasoning
  • 1 egg yolk (for egg wash, optional)

Instructions

  1. Preheat oven to 350°F (175°C)
  2. Blend the cottage cheese until smooth.
  3. Add all other ingredients to the blender and mix until well combined.
  4. Roll dough into a log about 8 inches long and 2 inches wide.
  5. Cut into 6 pieces and shape into bagels with a hole in the center.
  6. Optional: Brush each with egg yolk for shine.
  7. Sprinkle seasoning on top.
  8. Bake at 350°F (175°C) for 12–15 minutes until golden brown.
