Recreate the nostalgic taste of your favorite childhood lunchbox treat with these incredibly fudgy, chewy cookies packed with rich chocolate flavor and topped with rainbow chocolate chips.

Ingredients

  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened to room temperature
  • ¾ cup (150g) granulated sugar
  • ½ cup (110g) packed light brown sugar
  • 1 large egg, at room temperature
  • 1 large egg yolk, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (170g) semi-sweet chocolate chips
  • Rainbow chocolate chips or rainbow sprinkles for topping

Instructions

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl using an electric mixer, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg, egg yolk, and vanilla extract to the butter mixture. Beat until well combined.
  5. Gradually add the dry flour mixture to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in the semi-sweet chocolate chips with a rubber spatula.
  7. Scoop 2 tablespoon portions of dough and roll them into balls. Place them 2 inches apart on the prepared baking sheets (about 12 per sheet).
  8. Bake for 9-11 minutes, or until the edges are set but the centers still look slightly soft and puffy.
  9. Immediately after removing from the oven, gently press 5-6 rainbow chocolate chips onto the top of each hot cookie.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely, about 15-20 minutes.

Notes

  • Do not overbake if you want fudgy cookies. They continue cooking on the hot pan after removal from oven.
  • Room temperature ingredients (65-68°F for butter) are key to creating a smooth, well-emulsified dough.
  • For extra fudgy texture, use melted butter cooled to room temperature instead of softened butter, and reduce baking time by 1 minute.
  • Rainbow chips may bleed slight color if stored in humid conditions.
