- 1 teaspoon active dry yeast
- 1 cup warm water
- 1 tablespoon honey
- 1 teaspoon salt
- 3½ to 4 cups all-purpose flour
- 3 tablespoons butter, melted
- ½ cup brown sugar
- 1 tablespoon ground cinnamon
- 1 tablespoon baking soda
- 2 teaspoons granulated sugar
- 1 teaspoon salt
- In a mixer bowl, combine yeast, warm water, honey, and salt. Let sit for 10 minutes.
- Add 3½ cups flour. Mix and knead for 5 minutes. Add more flour if needed.
- Rest dough 15 minutes, knead again 5 minutes. Let rise 4–5 hours or overnight.
- If chilled, bring dough to room temp. Shape into bagels. Rest 1 hour.
- Mix brown sugar and cinnamon. Preheat oven to 425°F (220°C).
- Boil water with baking soda, sugar, and salt. Boil bagels 1 minute per side.
- Drain, brush with melted butter, and coat with cinnamon sugar.
- Bake 20 minutes. Slice to check doneness. Add 3–5 more minutes if needed.
- Cool on a wire rack before serving.
Notes
- Store in an airtight container up to 3 days.
- Toast leftovers for a crispy texture.
