All the classic flavors of a Caesar salad – crispy chicken, tangy dressing, and savory Parmesan – stuffed into a soft sandwich roll for the ultimate satisfying lunch.

  • 2 large boneless, skinless chicken breasts (about 1 lb total)
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper
  • 4 sandwich rolls or ciabatta bread
  • 2 cups romaine lettuce, chopped
  • 1/2 cup croutons, crushed
  • 4 slices provolone or mozzarella cheese (optional)
  • Salt to taste
  • 1 tablespoon oil or butter for cooking

Instructions

  1. Place the chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  2. Heat 1 tablespoon of oil or butter in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until golden brown and cooked through (165°F/74°C).
  3. Remove from the skillet and let rest for 5 minutes, then slice into strips.
  4. In a large bowl, whisk together the Caesar dressing, mayonnaise, Parmesan cheese, lemon juice, Dijon mustard, and black pepper.
  5. Add the chopped romaine lettuce and crushed croutons to the dressing and toss to combine.
  6. If using, place a slice of cheese on the bottom half of each roll and toast lightly under a broiler or in a dry pan until melted.
  7. Top the cheesy (or plain) roll bottoms with the sliced chicken and a generous amount of the Caesar salad mixture. Place the top half of the roll on and serve immediately.

Notes

  • Pounding the chicken to an even thickness ensures it cooks evenly without drying out.
  • You can use pre-cooked rotisserie chicken to make this even faster – just slice and assemble.
  • For extra flavor, marinate the chicken in Caesar dressing for 30 minutes before cooking.
  • Toast the sandwich rolls before assembling to prevent them from getting soggy.
