  • 2 small chicken breasts, cut into ½ inch pieces
  • 1 Italian style loaf
  • 2 tablespoons poultry seasoning (or salt, pepper, garlic powder)
  • sticks unsalted butter
  • 2 tablespoons minced garlic (or garlic paste)
  • 2 tablespoons chopped parsley
  • 1 teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • ¼ cup shredded parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup heavy cream

Instructions

  1. Cut chicken breasts into ½ inch pieces and transfer to bowl. Drizzle with 1 tablespoon olive oil and season with 1 tablespoon poultry seasoning. Let marinate for 10 minutes.
  2. Cook seasoned chicken in large skillet over medium heat until golden brown, 5-7 minutes. Set aside and keep pan for later use.
  3. Preheat oven to 350°F. Slice bread lengthwise in half to create two long pieces.
  4. Combine 1 stick melted butter, 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and crushed red pepper flakes. Spread evenly on both bread halves.
  5. Toast bread in preheated oven for 5-10 minutes, checking after 5 minutes until golden but not too crispy.
  6. Using same pan from chicken, heat over medium-low. Add ½ stick butter, let melt, then stir in remaining garlic. Cook 2-3 minutes until fragrant.
  7. Lower heat to low and add heavy cream, parmesan cheese, and remaining parsley. Simmer, stirring continuously, until sauce thickens slightly, 3-5 minutes.
  8. Spread half alfredo sauce over toasted bread, top with cooked chicken and mozzarella cheese, then add remaining sauce.
  9. Return to oven and bake at 350°F for 5 minutes until cheese is fully melted. Slice into 2-3 inch pieces and serve immediately.

Notes

  • Use day-old crusty bread for better texture that holds up to sauce and toppings without becoming soggy.
  • Don’t overcook chicken – cook until just golden brown to keep tender and juicy. Season well and let marinate for at least 10 minutes.
  • Keep heat low when making alfredo sauce to prevent breaking. If sauce breaks, whisk in additional cream.
