  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced into ½-inch cubes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • ½ cup beef broth
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in large skillet over medium heat. Add ground beef and cook 6-8 minutes, breaking apart with spoon, until browned. Drain excess fat leaving about 1 tablespoon.
  2. Add chopped onion and minced garlic to beef. Cook 3-4 minutes, stirring occasionally, until onion softens and becomes translucent.
  3. Add diced potatoes to skillet and season with salt, pepper, paprika, and oregano. Stir to coat potatoes with seasonings.
  4. Pour in beef broth and stir to combine. Cover skillet, reduce heat to low, and cook 20-25 minutes until potatoes are fork-tender and liquid is mostly absorbed.
  5. Sprinkle shredded cheddar cheese evenly over beef and potatoes. Cover again and cook 2-3 minutes until cheese melts completely.
  6. Garnish with freshly chopped parsley and serve hot directly from skillet.

Notes

  • Dice potatoes uniformly (½-inch cubes) for even cooking. Yukon Gold or Russet potatoes both work well.
  • Don’t skip browning the beef properly. Good caramelization adds depth of flavor.
  • Check potatoes at 20 minutes. Cooking time varies based on potato type and cube size.
  • For extra flavor, add bell peppers, mushrooms, or other vegetables with the potatoes.
