Creamy twist on classic white chicken chili infused with bold Cajun flavors. Features seasoned chicken, smoked sausage, white beans, and rich Parmesan broth. Ready in 1 hour.

  • 1 lb boneless skinless chicken breasts or thighs
  • 1 lb smoked poultry sausage, sliced
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 cup diced onion
  • 1 cup diced celery
  • 1 cup diced bell pepper
  • 1 finely diced jalapeño
  • 4 chopped garlic cloves
  • 1 teaspoon Cajun seasoning for chicken
  • 1 tablespoon Cajun seasoning for soup
  • 1 teaspoon ground cumin
  • 4 cups chicken broth
  • 2 (14.5 oz) cans white beans, rinsed and drained
  • 1/2 cup salsa verde
  • 1/2 cup sour cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lime juice (optional)
  • 2 tablespoons chopped cilantro or parsley (optional)
  • 2 green onions, sliced (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat oil over medium heat in large pot. Cook sliced sausage 5-7 minutes until golden, then remove and set aside.
  2. Season chicken with 1 teaspoon Cajun spice. Cook in same pot 5-7 minutes until lightly browned, then remove and set aside.
  3. Melt butter and sauté onion, celery, bell pepper, and jalapeño 7-10 minutes until tender and translucent.
  4. Stir in garlic, 1 tablespoon Cajun seasoning, and cumin. Cook 1 minute until fragrant, stirring constantly.
  5. Add broth, beans, salsa verde, chicken, and sausage. Bring to boil, reduce heat, cover and simmer 15 minutes.
  6. Remove chicken, shred or slice while warm, and return to pot.
  7. Stir in sour cream and Parmesan until melted and smooth.
  8. Add lime juice, cilantro, green onions. Season with salt and pepper to taste. Serve hot.

Notes

  • Use smoked andouille sausage for authentic Cajun flavor. Adjust Cajun seasoning and jalapeño to control heat level.
  • For slow cooker: After step 4, transfer to slow cooker. Cook low 6-10 hours or high 2-4 hours. Complete steps 6-8 afterward.
  • Can add 1 cup corn at end for sweetness. Top with cheese, avocado, or hot sauce as desired.
