Bold, spicy, and ready in 30 minutes. Cajun Chicken Sloppy Joes feature lean ground chicken cooked with zesty Cajun seasoning and a rich tomato sauce piled onto toasted buns for an easy one-pan family dinner.

  • 1 lb ground chicken
  • 1 medium onion, diced
  • 1 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 2 tablespoons Cajun seasoning (start with 1 tablespoon for milder heat)
  • 1/2 teaspoon salt (to taste)
  • 1/4 teaspoon black pepper
  • 1 cup tomato sauce
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon oil (for sauteing)
  • 8 slider buns or hamburger buns, toasted

Instructions

  1. Heat a large skillet over medium heat and add the oil. Add diced onions and bell peppers and cook for 4 to 5 minutes, stirring occasionally, until softened and translucent.
  2. Add ground chicken to the skillet. Break it into small crumbles with a spatula and cook for 6 to 8 minutes, stirring frequently, until no pink remains and the meat is cooked through evenly.
  3. Stir in minced garlic, Cajun seasoning, salt, and black pepper. Cook for 30 to 60 seconds, stirring constantly, until the spices are fragrant and well distributed.
  4. Pour in tomato sauce, ketchup, and Worcestershire sauce. Stir to combine. Reduce heat to medium-low and simmer for 5 to 7 minutes, stirring occasionally, until the sauce thickens and clings to the chicken. Add a splash of water if it thickens too quickly.
  5. Spoon the hot Cajun chicken filling onto toasted buns and serve immediately.

Notes

  • Start with 1 tablespoon of Cajun seasoning if cooking for kids or anyone sensitive to heat. Taste and add more after the sauce is incorporated.
  • If your Cajun seasoning blend is already salty, reduce the added salt and taste as you go.
  • Store filling separately from buns. Reheat in a skillet over low heat with a splash of water or broth to loosen the sauce.
  • Freeze cooled filling in portioned containers for up to 3 months.
