In a small bowl, whisk together Greek yogurt, ketchup, pickle relish, Dijon mustard, white vinegar, paprika, garlic powder, salt, and pepper until smooth. Cover and refrigerate while you prepare the rest.
Heat a large skillet over medium-high heat. Add ground beef and break apart with a wooden spoon. Cook 7 to 9 minutes until fully browned with no pink remaining. Drain excess fat carefully.
Stir in onion powder, garlic powder, salt, and black pepper. Cook one more minute until fragrant. Remove from heat.
Divide shredded lettuce evenly among four serving bowls.
Top each bowl with seasoned ground beef, cherry tomatoes, chopped pickles, diced red onion, and shredded cheddar cheese.
Drizzle the chilled special sauce over each Big Mac Bowl and serve immediately while beef is still warm.
Notes
Use 90/10 lean ground beef to avoid excess grease in the bowl.
