Creamy and spicy soup combining jalapeno popper flavors with tender chicken in a rich, cheesy broth. Perfect comfort food ready in 45 minutes.

  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups cooked chicken, shredded or diced
  • 46 fresh jalapenos, diced (seeds removed for less heat)
  • 8 ounces cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup bacon bits or crumbled cooked bacon
  • Salt and pepper to taste
  • Sour cream and additional jalapenos for garnish

Instructions

  1. Melt butter in a large pot or Dutch oven over medium heat. Add diced onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant, stirring constantly to prevent burning.
  3. Stir in flour to create a roux and cook for 1-2 minutes, stirring constantly to remove raw flour taste.
  4. Gradually whisk in chicken broth, followed by milk and heavy cream. Continue whisking until mixture is smooth and lump-free.
  5. Bring soup to a simmer over medium heat, stirring occasionally, until it begins to thicken, about 5-7 minutes.
  6. Add diced jalapenos and cooked chicken to pot. Simmer for 10-15 minutes to allow flavors to meld together.
  7. Reduce heat to low and stir in cream cheese until completely melted and incorporated, creating a silky texture.
  8. Add shredded cheddar cheese and bacon bits, stirring until cheese is fully melted. Do not let soup boil.
  9. Season with salt and pepper to taste, starting with 1/2 teaspoon of each and adjusting as needed.
  10. Serve hot, garnished with a dollop of sour cream and additional jalapeno slices if desired.

Notes

  • For milder soup, remove all seeds from jalapenos and reduce quantity to 2-3 peppers. Can substitute half with green bell peppers.
  • Rotisserie chicken works perfectly for quick preparation. Can also use leftover grilled or poached chicken.
  • If soup is too thick, thin with additional chicken broth or milk. Don’t boil after adding dairy to prevent curdling.
  • Use sharp cheddar cheese for best flavor. For extra smoky flavor, add smoked paprika or chipotle powder.
