  • pounds boneless skinless chicken, cut into 1-inch pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Cut chicken into 1-inch pieces and season with salt and pepper.
  3. Heat olive oil in large skillet over medium-high heat. Add chicken and cook 6-8 minutes until no longer pink and cooked through.
  4. Transfer cooked chicken to plate and set aside.
  5. Add butter to same skillet. Once melted, sauté garlic 30 seconds. Add flour and stir to make paste.
  6. Whisk in chicken broth, heavy cream, and Parmesan cheese until smooth.
  7. Stir in sun-dried tomatoes, paprika, and Italian seasoning. Season with salt and pepper to taste.
  8. Simmer sauce a few minutes until it thickens.
  9. Return chicken and pasta to skillet. Stir to coat everything in sauce.
  10. Garnish with fresh basil and additional Parmesan. Serve immediately.

  • Cut chicken into similar-sized pieces for even cooking.
  • Use freshly-grated Parmesan for best flavor and melting.
  • Make roux properly before adding liquids for smooth sauce.
