These French Dip Tortilla Roll-Ups are packed with thinly sliced roast beef, provolone cheese, and a flavorful homemade au jus sauce, all rolled up in a soft flour tortilla. A high-protein lunch or game day snack ready in just 15 minutes.

  • 4 large (10-inch) flour tortillas
  • 8 oz thinly sliced roast beef
  • 4 slices provolone cheese
  • 1/4 cup caramelized onions
  • 2 tablespoons horseradish sauce
  • 2 cups beef broth (low-sodium recommended)
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Combine beef broth, soy sauce, Worcestershire sauce, garlic powder, and black pepper in a small saucepan. Bring to a simmer over medium heat, then reduce to low and keep warm while you assemble the roll-ups.
  2. Warm the flour tortillas for 15 seconds in the microwave or 30 seconds in a dry skillet over medium heat to make them pliable and easy to roll without cracking.
  3. Lay all four tortillas flat on a clean surface. Place one slice of provolone cheese on each, leaving about a 1-inch border around the edges.
  4. Layer 2 oz of thinly sliced roast beef evenly over the cheese on each tortilla.
  5. Spoon 1 tablespoon of caramelized onions over the beef, then drizzle with horseradish sauce. Do not overfill or the tortilla will be hard to roll tightly.
  6. Fold in the sides of each tortilla first, then roll tightly from the bottom up, pressing gently as you go. The softened cheese helps hold the roll together and seal the edges.
  7. Slice each French dip tortilla roll-up in half diagonally and serve immediately with the warm au jus dipping sauce on the side.

Notes

  • Start the au jus before assembling the roll-ups so everything is ready at the same time.
  • Warm tortillas before rolling to prevent cracking and make them more pliable.
  • Use deli-sliced or leftover roast beef – both work well in this recipe.
  • Store roll-ups and au jus separately in airtight containers for up to 3 days. Reheat roll-ups in a skillet for 2 to 3 minutes per side or microwave for 60 to 90 seconds. Warm au jus on the stovetop over low heat – do not boil.
  • For a spicier version, add a few slices of jalapeno inside before rolling.
  • Slice into smaller pinwheels for party appetizer presentation.
