A satisfying pasta salad with juicy chicken, savory ground beef, romaine lettuce, and a creamy Caesar ranch dressing. Perfect for meal prep, potlucks, and easy weeknight dinners. Serve warm or cold.

  • 1.5 lbs chicken breasts, diced into bite-sized pieces
  • 1/2 lb ground beef
  • 1 lb short pasta (rotini or fusilli recommended)
  • 12 oz romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/2 cup ranch dressing
  • 3 small garlic cloves, chopped
  • Freshly grated Parmesan cheese, for serving (optional)

Instructions

  1. Season diced chicken with salt and pepper. Heat a large skillet over medium heat and cook the chicken, stirring occasionally, until golden on all sides and cooked through, about 4 to 5 minutes total. Set aside to cool slightly.
  2. In the same skillet, cook the ground beef over medium heat, breaking it apart as it cooks, until fully browned with no pink remaining, about 6 to 8 minutes. Drain any excess fat and set aside to cool.
  3. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Rinse with cold water and drain well to stop cooking and keep pasta firm.
  4. In a large mixing bowl, combine cooled pasta, cooked chicken, cooked ground beef, chopped romaine, Caesar dressing, ranch dressing, and chopped garlic.
  5. Toss gently until everything is well coated. Taste and add more dressing gradually if desired.
  6. Serve immediately at room temperature or chill for 30 minutes. Top with freshly grated Parmesan cheese before serving if desired.

Notes

  • Rinse pasta with cold water after boiling to stop cooking and keep it firm in the salad.
  • Do not add romaine while pasta or proteins are still hot – it will wilt immediately.
  • For meal prep, store dressing separately and toss just before serving to keep everything fresh.
  • If the salad seems dry after refrigerating, add a splash of Caesar dressing and toss before serving.
