Quick and delicious BBQ chicken flatbread with 30 grams of protein. Simple ingredients with whole wheat base and easy assembly.

  • 1 whole wheat flatbread or pita (6-inch)
  • 4 oz cooked chicken breast, shredded
  • 2 tablespoons BBQ sauce
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup mozzarella cheese, shredded
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons plain Greek yogurt (optional, for drizzle)
  • 1 teaspoon lime juice (optional, for drizzle)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Note: Oven preheating takes about 10 minutes.
  2. In a small bowl, mix the shredded chicken with BBQ sauce until well coated. If using whole chicken breast, shred it first before mixing.
  3. Place the flatbread on the prepared baking sheet and spread the BBQ chicken evenly over it, leaving a half-inch border.
  4. Top with sliced red onion and shredded mozzarella cheese.
  5. Bake for 8-10 minutes, or until the cheese is melted, bubbly, and golden at edges. Flatbread edges should be crispy and lightly browned.
  6. If using the yogurt drizzle, mix Greek yogurt and lime juice in a small bowl while flatbread bakes. Season with salt and pepper to taste.
  7. Remove the flatbread from the oven and sprinkle with fresh cilantro. Drizzle with the yogurt mixture if desired.
  8. Let cool 2-3 minutes for cleaner slices, then cut into wedges and serve.

Notes

  • Rotisserie chicken is a great time-saver for this recipe. Any cooked chicken breast works well.
  • For crispier edges, brush the flatbread edges with olive oil before adding toppings.
  • Add jalapeños or red pepper flakes for extra heat if desired.
  • Can substitute ranch or blue cheese dressing for the Greek yogurt drizzle.
  • Active prep time is about 15 minutes; oven preheating adds 10 minutes to total time.
