Easy BBQ chicken flatbread is flavor loaded, quick and super filling for an easy weekday meal. High protein recipe perfect for busy nights.

  • 2 large chicken breasts (or rotisserie chicken)
  • 1 teaspoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried tarragon
  • 1/4 teaspoon salt
  • 2 flatbreads
  • 1/2 cup BBQ sauce
  • 2 garlic cloves, minced
  • 1 cup mozzarella cheese, shredded
  • 1 small red bell pepper, chopped
  • 1/4 cup red onion, sliced
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons red pepper flakes (optional)
  • 3 tablespoons Parmesan cheese (optional)

Instructions

  1. Pat chicken dry and cut thick breasts in half. Mix seasonings and coat both sides of chicken.
  2. Heat oil in skillet over medium-high heat. Cook chicken 8-10 minutes per side until 165°F internal temperature.
  3. Let chicken rest 5 minutes, then cut into bite-sized pieces.
  4. Preheat oven to 375°F and place flatbreads on baking sheet.
  5. Brush flatbreads generously with BBQ sauce and sprinkle with minced garlic.
  6. Layer mozzarella, chicken pieces, bell peppers, and red onions on flatbreads.
  7. Bake 10-15 minutes until edges are golden and cheese is bubbly.
  8. Cool 2-3 minutes, top with cilantro and extra BBQ sauce, then slice and serve.

  • Use rotisserie chicken to save time – just skip seasoning and cooking steps.
  • Cut thick chicken breasts in half for even cooking and better flavor distribution.
  • Flatbread alternatives include naan bread or lavash for different textures.
