This Bang Bang Chicken Bake is a creamy, spicy, and cheesy one-pan dinner made with tender chicken cubes coated in a bold bang bang sauce and topped with melted mozzarella and cheddar. Ready in 40 minutes.

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup mayonnaise (full-fat recommended)
  • 1/4 cup sweet chili sauce
  • 2 tablespoons Sriracha (adjust to taste)
  • 1 teaspoon garlic powder
  • 1 cup shredded mozzarella cheese (freshly shredded preferred)
  • 1/2 cup shredded cheddar cheese (freshly shredded preferred)
  • Salt and black pepper to taste
  • 2 green onions, thinly sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9×13 inch baking dish.
  2. In a large mixing bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and garlic powder until smooth and fully combined. The sauce should look creamy and slightly orange-pink.
  3. Add the cubed chicken to the bowl. Season with salt and black pepper. Toss until every piece is evenly coated in the bang bang sauce.
  4. Spread the chicken mixture in a single, even layer in the prepared baking dish. Avoid piling the pieces to ensure even cooking.
  5. Bake uncovered for 20 to 22 minutes, or until the chicken is cooked through and the internal temperature reaches 165 degrees F.
  6. Remove the dish from the oven. Sprinkle the shredded mozzarella and cheddar evenly over the top of the chicken.
  7. Return to the oven and bake for another 7 to 8 minutes, until the cheese is fully melted, bubbly, and just starting to turn golden at the edges.
  8. Let the bake rest for 3 to 5 minutes. Garnish with sliced green onions and sesame seeds before serving.

  • Use freshly shredded cheese for the best melt. Pre-shredded cheese contains anti-caking agents that can make the topping grainy.
