¼ cup maple syrup or honey (adjust to sweetness preference)
1 teaspoon vanilla extract
½ cup fresh or frozen blueberries
Optional: a squeeze of lemon juice, cinnamon, or a pinch of salt
Instructions
Preheat your oven to 375°F (190°C). Lightly grease two 10-ounce ramekins or a small baking dish.
In a blender or food processor, combine the cottage cheese, eggs, maple syrup, and vanilla extract. Blend for 45-60 seconds until completely smooth and creamy with no visible curds.
Pour the mixture evenly into the prepared ramekins or baking dish.
Sprinkle the blueberries evenly over the top of the cottage cheese mixture.
Bake for 25-30 minutes, or until the center is set and the top is lightly golden. The bowls will puff up while baking.
Remove from the oven and let cool for 5 minutes before serving. The bowls will deflate slightly as they cool.
Notes
Blending the cottage cheese mixture until completely smooth is crucial for avoiding a grainy texture. Blend for at least 45-60 seconds.
If using frozen blueberries, add them directly from the freezer. You may need to add 2-3 extra minutes to the baking time.
