These Apple Cinnamon Streusel Muffins are a comforting, fall-inspired treat that taste like apple crumble in muffin form, complete with buttery streusel topping.

  • 1 cup chopped apples, peeled and diced (about 1 medium apple)
  • ½ cup all-purpose flour (for streusel)
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon (for streusel)
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt until combined.
  3. In a separate medium bowl, whisk egg, then add milk, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir just until flour disappears – batter should be slightly lumpy.
  5. Gently fold in diced apples using a spatula until evenly distributed.
  6. For streusel topping, combine flour, brown sugar, and cinnamon in small bowl. Rub in cold butter with fingertips until mixture forms pea-sized crumbs.
  7. Use ice cream scoop to divide batter evenly among 12 muffin cups, filling each about ¾ full.
  8. Top each muffin with generous tablespoon of streusel mixture, pressing lightly to adhere.
  9. Bake for 20-22 minutes until tops are golden brown and toothpick inserted in center comes out with few moist crumbs.
  10. Cool in pan for 5 minutes before transferring to wire rack to cool completely.

  • Use firm apples like Honeycrisp for sweetness or Granny Smith for tartness. Peel and dice into ¼-inch pieces for best texture.
