Gourmet grilled cheese with creamy melted brie and sweet apple butter on crispy sourdough. Quick and easy comfort food.

  • 2 slices thick-cut sourdough bread
  • 2 oz brie cheese, sliced (rind on or removed, your choice)
  • 2 tablespoons apple butter
  • 1 tablespoon unsalted butter, softened

Instructions

  1. Lay the two slices of sourdough bread on a cutting board. Spread the softened butter evenly on one side of each slice, covering all the way to the edges.
  2. Flip one slice over so the buttered side is down. Layer the sliced brie cheese evenly on the unbuttered side of the bread, overlapping slightly.
  3. Spread the apple butter over the brie cheese using the back of a spoon. Top with the remaining slice of bread, buttered side facing up.
  4. Place the skillet over medium-low heat and let it warm up for 1-2 minutes.
  5. Carefully place the sandwich in the hot pan. Cook for 3-4 minutes, or until the bread is deep golden brown and the cheese starts to ooze at the edges. Press down gently with the spatula while cooking.
  6. Flip the sandwich carefully and cook for another 3-4 minutes until the second side is golden brown and crispy and the brie is fully melted.
  7. Remove from the skillet and let it rest for about a minute before slicing diagonally. Serve immediately while hot and crispy.

Notes

  • Use thick-cut sourdough bread to prevent sogginess. Thin bread doesn’t hold up well to the cheese and apple butter.
  • Cook on medium-low heat to allow the brie to melt completely without burning the bread. This is the key to perfect results.
  • Let brie come to room temperature before cooking for faster, more even melting.
  • For extra flavor, add fresh sage leaves, arugula, or prosciutto before grilling.
  • Reheat leftovers in a skillet, not microwave, to restore crispness.
